IBA official recipe. Shake. Made with mezcal, overproof white rum, and Falernum. Served in a coupe glass.

Ingredients

• Mezcal 30 ml
• Overproof white rum 15 ml
• Falernum 15 ml
• Maraschino liqueur 1 bar spoon
• Lime juice 22.5 ml
• Granulated Sugar Syrup 15 ml
• Egg white As needed

Method

1. Chill the glassware in advance.
2. Pour all ingredients into the shaker.
3. Fill with ice and shake well for 12–15 seconds until the shaker frosts.
4. Double strain into the chilled glass.
5. Finish according to garnish requirements.
