Official IBA recipe. Shaken, featuring Scotch whisky, Islay peated whisky and lemon juice, served in an old fashioned glass.

Ingredients

• Scotch whisky 60 ml
• Islay peated whisky 7.5 ml
• Lemon Juice 22.5 ml
• Honey syrup 22.5 ml
• Ginger As needed

Method

1. Chill the glassware in advance.
2. Pour all ingredients into the shaker.
3. Fill with ice and shake well for 12–15 seconds until the shaker frosts.
4. Double strain into the chilled glass.
5. Finish according to garnish requirements.

Glassware: Old Fashioned Glass; Ice: Ice cubes; Garnish: Candied ginger; About 18.6% ABV
