Rabo de Galo

Official IBA recipe. Stirred, based on cachaça, sweet vermouth, and Cynar, served in an Old Fashioned glass.

Ingredients

• Cachaca 60 ml
• Sweet red vermouth 20 ml
• Cynar 15 ml
• Angostura bitters 2 dashes

Method

1. Chill the glassware in advance.
2. Pour all ingredients into the mixing glass.
3. Fill with ice and stir with a bar spoon along the glass wall for 20–30 seconds until well diluted and chilled.
4. Strain into the chilled glass.
5. Finish according to garnish requirements.

Glassware: Old Fashioned Glass; Ice: Ice cubes; Garnish: Orange twist; About 25.2% ABV
