Official IBA recipe. Stirred, based on cognac, absinthe, and sugar cube, served in an Old Fashioned glass.

Ingredients

• Cognac 50 ml
• Absinthe 10 ml
• Sugar cube As needed
• Peychauds bitters As needed

Method

1. Chill the glassware in advance.
2. Pour all ingredients into the mixing glass.
3. Fill with ice and stir with a bar spoon along the glass wall for 20–30 seconds until well diluted and chilled.
4. Strain into the chilled glass.
5. Finish according to garnish requirements.

Glassware: Old Fashioned Glass; Ice: No ice; Garnish: Lemon zest; About 34.7% ABV
